Summer Greek Salad

Serving Size: 8-10
Ingredients:
2 cucumbers, cubed
½ watermelon, peeled and cubed
¼ cup mint leaves, thinly sliced
¼ cup basil leaves, thinly sliced
½ cup feta, small diced
2 tablespoons fresh lime juice
2 tablespoons honey
2 tablespoons extra-virgin olive oil
Salt and pepper, to taste
Instructions:
In a small bowl, whisk together the lime juice, honey, oil, plus salt and pepper, to taste.
In a large bowl, combine the cucumber, watermelon, mint, basil, and feta. Pour the dressing over generously. Toss to coat evenly.
Serve immediately and enjoy a wonderful summer’s day salad!
