Summer Greek Salad

Serving Size: 8-10

Ingredients:

    1. 2 cucumbers, cubed 

    2. ½ watermelon, peeled and cubed 

    3. ¼ cup mint leaves, thinly sliced 

    4. ¼ cup basil leaves, thinly sliced 

    5. ½ cup feta, small diced 

    6. 2 tablespoons fresh lime juice

    7. 2 tablespoons honey

    8. 2 tablespoons extra-virgin olive oil 

    9. Salt and pepper, to taste 

Instructions:

    1. In a small bowl, whisk together the lime juice, honey, oil, plus salt and pepper, to taste.

    2. In a large bowl, combine the cucumber, watermelon, mint, basil, and feta. Pour the dressing over generously. Toss to coat evenly.

    3. Serve immediately and enjoy a wonderful summer’s day salad!
