Summer Berry Salad with Candied Almonds

Serving Size: 4-6
Ingredients:
2 cups almonds, chopped or slivered
1 cup granulated sugar
2 tablespoons apple cider vinegar
2 tablespoons extra virgin olive oil
Salt and pepper to taste
1 cup fresh blackberries
1 cup fresh raspberries
1.5 cup fresh strawberries, quartered, divided
4 cups Salanova salad mix, torn into bite sized pieces
Instructions:
Place almonds and sugar into a pan on the stove. Heat on medium heat stirring often. The sugar will begin to melt, as that happens make sure to constantly stir to avoid burning. Once the sugar is fully melted and coating the almonds, pour them onto a baking sheet to cool. Set aside.
In a small blender, add ½ cup of strawberry pieces, vinegar, oil, salt, and pepper. Blend until smooth, taste for salt and pepper preference. Set aside.
Place the berries and lettuce in a bowl, drizzle the dressing over and lightly toss. Crumble the candied almonds into the bowl and toss again. Serve!
