Spicy Lemon Parsley Shrimp Scampi

Serving Size: 3-4
Ingredients:
1 ½ pounds of shrimp (shelled to preference)
2 tablespoons olive oil
½ cup fresh parsley, finely chopped
4 tablespoons butter
5 cloves of garlic, minced
2 Fresno chilis, minced
1 ½ pounds of shrimp (shelled to preference)
Salt and pepper to taste
¼ cup dry white wine
½ teaspoons red pepper flakes (optional)
3 tablespoons lemon juice
Instructions:
In a ziplock bag, place the raw shrimp, olive oil, and ¼ cup of the parsley. Season with salt, massage the shrimp to coat, then seal and marinate for 10 minutes.
In a large pan, melt 2 tablespoons of the butter on medium heat. Once the butter is melted, add the garlic and chilis. Saute for about 1-2 minutes, until fragrant. Add in all the shrimp and cook each side for 1-2 minutes.
Deglaze with the white wine, then toss in the red pepper flakes. Simmer and reduce the wine by half, about 2 minutes. Finish the sauce by adding in lemon, the remaining butter, and parsley. Stir until well combined and taste for seasoning.
Serve immediately with good bread, pasta, or rice!
