Fresh Radishes with Whipped Chive Butter and Flakey Salt

Serving Size: 10-12 

Ingredients:

    1. 2 dozen radishes 

    2. 2 sticks of good quality unsalted butter, fully softened  

    3. ¼ cup chives diced

    4. 1 clove of garlic, minced 

    5. Flakey salt 

Instructions:

    1. Chop off the radish leaves, save for another recipe. Wash the radishes and let drain. 

    2. Melt 1 tablespoon of butter on low and gently fry the chives and garlic, about 2-3 minutes until fragrant. Remove from heat and allow to cool to room temperature. 

    3. Take the rest of the softened butter and whip in the stand mixer or with a hand mixer. Beat until the butter is fluffy and light in color. Scoop in the cooled chive mixture and beat again until fully incorporated. Season with salt to taste.

    4. Dollop the butter into a serving bowl, arrange the radish on top of the butter, top with flakey salt. 

    5. Serve immediately as is! Serve alongside a charcuterie board to celebrate these lovely vegetables as a classic French snack.
