Braised Spicy Garlic Bok Choy

Serving Size: 2-3 

Ingredients:

    1. 1 pound bok choy, washed and halved 

    2. ½ cup chicken bone broth (or any broth of choice)

    3. 1 tablespoon oil 

    4. 1 teaspoon salt 

    5. 8 cloves of garlic minced 

    6. 1 tablespoon chili oil 

    7. 2 tablespoon soy sauce 

    8. 1 tablespoon mirin 

    9. 1 tablespoon rice wine vinegar 

Instructions:

    1. In a small saucepan on medium to low heat, combine the chili oil and garlic. Cook until the garlic is fragrant and lightly browned. Add the soy sauce, mirin, and rice wine vinegar and stir to combine. Simmer for 2-3 minutes to thicken. Remove from heat and set aside. 

    2. In a large pan, add the oil and heat on high. Once the oil is shimmering add the bok choy, cut side down. Cook for 1-3 minutes until the bok choy has some nice color. Pour in the broth and cover. Reduce heat to medium and simmer for 2 minutes. Remove the lid and let broth evaporate until the bok choy is just soft but still has some crunch. Remove from the pan and plate immediately. Drizzle the sauce overtop the bok choy. Serve as a delicious side dish!
